The first one looks like the one you showed it in class (maybe it is) I also like the second one better. It is a beautiful landscape. I like the sky, specially the line that the clouds form. And I think you should keep the colors.
I agree with what they said below I love the second one the colors you captured are beautiful. The first image's foreground is to distracting, there also isn't enough background landscape. I think you could also explore images with a simple landscape that is predominantly in the foreground with the billboard further in the distance than what you've had thus far. Just some ideas for you.
I think the top one can be saved with some work. The major problem for me is that the back of the sign is in heavy shadow. use screen mode on a background copy and then a layer mask to paint the rest of the image out.

I like your second one much more. It seems to fit with your idea of these sort of ugly subjects and beautiful landscapes in the background

I think the second one has a better composition but the light in it is a little dead. I like the light and sky in the first one better.
